This would be assuming a typical truffle – a mixture of heavy cream and chocolate or just fondant mixed with various flavor oils. Or actually, even chocolate covered cherries, as I have had them go bad as well after a few months. I make candies for a store and would like to be able to have them last at least a few months without excessive worry about my product going bad on the shelf if I come across a slow month.
