For uniform lemon rind shreds, this is the perfect grater. Its design is based on that of a rasp, the small and efficient woodworking tool. The cutters are especially sharp, which guarantees easy grating. But this also means you’ll need to exercise extra caution–no one likes grated knuckles. The totally flat grating surface makes it easy to move the fruit across the blades, while the rounded edges allow you to set this across the top of a bowl and grate directly into it. I have owned the standard rasp-grater for over 15 years, and it’s still as sharp as ever. Recently splurged and got the one with a handle, since i tend to scrape my fingers while holding it (no cuts, though). This is hands down one of the most useful tools in my kitchen – I gave away my garlic press since I couldn’t find a reason to own it any more. Garlic, nutmeg, hard cheese, zest, this rasp will tackle it all. Get the coarser one for softer cheeses and onion. There is no other grater like it.

We promptly sent two other zesters off to Goodwill after this arrived. It is a dream to use and easy to clean. I mainly use it to zest citrus peel, but it works well for fresh ginger, garlic, hard cheeses too. I am so happy I took a chance on it.

I am not a chef, but for my wife’s birthday I picked out a complicated recipe for dinner. Realized after the fact that I had no idea how to zest a lemon. I thought I had seen something on Amazon about microplanes and their use in the kitchen. I own a microplane for woodworking and am well acquainted with how sharp it is. I grabbed it from the tool box, cleaned it off, and was disappointed that I only needed 1 lemon’s worth of zest (since the process of zesting it only took about 30 seconds). Gentle shavings done very quickly. A very clever adaptation of a very useful tool.
